Fresh Corn & Black Bean Salsa
Summer Appetizer • Fresh & Easy
A Simple Summer Favorite
There is something about the peak of summer that calls for simplicity. When the corn is sweet and the days are long, we find ourselves gathering on the porch more often than not, looking for something fresh and easy to share. This salsa has become a staple in our kitchen during these months - it’s bright, colorful, and tastes exactly like a hot summer afternoon.
I first started making this version of corn and bean salsa years ago, and it has evolved with every season. It’s the kind of recipe that doesn’t demand perfection; it’s better when it’s relaxed. We love how the sweetness of the corn balances with the earthy black beans and the sharp kick of fresh lime. It’s hearty enough to be a side dish but light enough to keep the conversation going around the chip bowl.
Whether you're hosting a neighborhood barbecue or just enjoying a quiet sunset with your family, I hope this recipe brings a little extra sunshine to your table. It’s a reminder that often, the best things in life are the simplest ones we grow and gather ourselves.
Make It Fresh 🌿
If you're lucky enough to have access to fresh sweet corn, skip the frozen bag! Grill 3-4 ears of corn until slightly charred, then cut the kernels off the cob for a deep, smoky flavor that makes this salsa truly special. Fresh cilantro and peppers straight from the garden will also take this recipe to the next level.
