Crispy, golden petite red and white potatoes tossed with ranch seasoning, garlic and Parmesan - an easy side dish that goes with just about anything.

Some of the best side dishes are also the simplest.

These ranch potatoes use petite red and white potatoes, a packet of ranch seasoning and just a few pantry staples. Everything gets tossed together and roasted until the potatoes are tender inside and crispy around the edges.

They're easy enough for a weeknight dinner but also a great side when you're feeding a crowd.

Ingredients

    2 lbs petite red and white potatoes, diced into bite-sized pieces
    3 tablespoons olive oil
    1 packet (1 oz.) dry ranch seasoning mix
    ½ teaspoon garlic powder
    ¼ teaspoon black pepper
    ¼ cup grated Parmesan cheese
    Salt, if needed
    Fresh parsley or chives, optional

Instructions

    1. Prep
    Preheat oven to 425°F. Wash and thoroughly dry the potatoes. Dice into approximately 1-inch pieces, leaving the skins on.

    2. Season
    Place potatoes in a large bowl. Add olive oil, ranch seasoning, garlic powder, black pepper and Parmesan. Toss until evenly coated.

    3. Arrange
    Spread potatoes in a single layer on a large baking sheet. Avoid overcrowding the pan.

    4. Roast
    Bake for 35–40 minutes, stirring or flipping after approximately 20 minutes.
    Continue roasting until the potatoes are fork-tender with crispy, golden edges.

    5. Serve
    Taste before adding additional salt since the ranch seasoning and Parmesan already contain salt.
    Garnish with parsley or chives if desired and serve warm.

Shannon's Kitchen Tip

Dry the potatoes thoroughly after washing. Excess moisture can cause potatoes to steam rather than roast.

For even crispier edges, arrange as many potatoes as possible cut-side down against the baking sheet.

Make It Your Own

Extra Crispy: Roast for an additional 5 minutes if needed.

Cheesy: Sprinkle with a little additional Parmesan during the final few minutes.

Fresh Herbs: Finish with chopped parsley or chives.

A Little Heat: Add a pinch of cayenne or crushed red pepper before roasting.
