From My Kitchen

“The very first meal I learned to make was chili. Over the years, I kept adjusting and taste-testing until it became this recipe. It may be simple, but sometimes those are the recipes that stick around the longest.”

Ingredients

1 tablespoon olive oil

1 yellow onion, finely diced

2 tablespoons minced garlic

1 green pepper, finely diced

1 pound lean ground turkey or ground beef

1 (16-ounce) can mild chili beans, do not drain

2 (14.5-ounce) cans petite diced tomatoes, do not drain

2 cups low-sodium tomato juice

½ teaspoon Cajun seasoning

2 tablespoons pure maple syrup

4 teaspoons chili powder

½ teaspoon cayenne pepper

½ tablespoon onion powder

½ tablespoon garlic powder

1 teaspoon cumin

¼ teaspoon black pepper

Directions

1.

Heat olive oil in a large skillet or Dutch oven. Add onion, garlic, and green pepper and cook until softened and the onion is translucent.

2.

Add ground turkey or beef. Cook until browned and crumbled. Drain excess grease if necessary.

3.

Add the meat mixture and all remaining ingredients to a large pot or slow cooker and stir well.

4.

For stovetop cooking, bring to a gentle boil, reduce heat, and simmer for approximately 30 minutes.

5.

For a slow cooker, cook on HIGH for 2–4 hours or LOW for 6–8 hours.

Slow Cooker Method

Brown turkey and sauté vegetables as directed in steps 1 and 2. Transfer the mixture to your slow cooker. Add all remaining ingredients and stir. Cook on Low for 6–8 hours or High for 3–4 hours. Stir well and serve warm.
