This recipe appeared in my cookbook, A Healthy Balance. It’s one of those simple recipes that proves a lighter version of a favorite can still be creamy, comforting, and worth sharing.
Ingredients
3 cups cooked and shredded chicken
1 cup Frank’s Red Hot sauce
2 (8-ounce) packages Neufchâtel cheese, softened
1 cup plain Greek yogurt
½ packet ranch seasoning
1 cup shredded reduced-fat cheddar cheese, divided
2 green onions, thinly sliced

Add shredded chicken and buffalo sauce to a pan over medium heat.

Add softened Neufchâtel cheese, Greek yogurt, and ranch seasoning. Stir until melted and completely combined.

Stir in approximately half of the shredded cheddar cheese until melted.

Transfer to a medium casserole dish and top with the remaining shredded cheddar.

Bake at 450°F for approximately 15 minutes, until hot and bubbly. Serve warm with vegetables, crackers, pita bread, or tortilla chips.
